Winter white bean and veggie soup
Heres a recipe for a winter vegetable soup that's quick and easy, especially when you get everything from Trader Joes! Also, cheap! Heres the recipe:
Winter white bean and veggie soup
2 Tbsp extra virgin olive oil
1 onion, diced
2 carrots, peeled and diced
2 celery stalks, diced (or get the mirepoix from Trader Joes)
2 garlic cloves, minced
1 15oz can of chopped tomatoes with juice
1 head of cauliflower, chopped
1 15oz can of Cannelli (white) beans
1 bunch kale (or the prewashed bag from TJ)
shitake mushrooms, chopped
parmesan cheese (optional for vegans)
Directions: Heat oil in large pot over medium heat. Add cauliflower until it begins to brown, then add mirepoix (onions, celery, and carrots) and garlic. Cook and stir for about 8 minutes, then add tomatoes with juice, and turn the heat up to medium high. Continue to stir, about 3 minutes, then add 7 cups of water and beans (rinsed). Cook for another 10 mins, then add kale, and cook for another 2-5 minutes. Season with salt and pepper to taste. Garnish with parmesan. Enjoy!
